Ingredients

  • 2 1/2 c. flour
  • 1/2 tsp. salt
  • 1 1/4 tsp. baking powder
  • 3/4 tsp. soda (baking)
  • 2 1/4 c. buttermilk
  • 3 large eggs (separate)
  • 3 Tbsp. melted butter

Instructions

  1. Sift together flour, salt, baking powder, and baking soda.
  2. Separate the eggs. Beat the yolks in a bowl, then add the buttermilk and melted butter, mixing until combined. Do not whisk further.
  3. Whip the egg whites to stiff peaks.
  4. Fold the dry flour mixture into the buttermilk‑butter mixture, then gently fold in the whipped egg whites until just incorporated.
