Ingredients

  • 3 c. chopped apples
  • 1 c. chopped walnuts
  • 3 eggs
  • 2 c. sugar
  • 1 1/3 c. oil
  • 1 tsp. vanilla
  • 2 1/2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine eggs, sugar, oil, and vanilla. Beat for 3 minutes at medium speed.
  3. In a separate bowl, blend together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Fold the dry ingredients into the wet mixture.
  5. Add chopped apples and walnuts to the batter and fold gently.
  6. Grease and flour a spring-form angel food pan.
  7. Pour the batter into the prepared pan.
  8. Bake for 1 1/2 hours, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake carefully from the pan as it tends to stick to the sides.
