Sweet and fruity apricot bread with a tender crumb, enhanced by chopped nuts and a hint of orange, perfect for breakfast or teatime enjoyment.

Ingredients

  • 1 cup dried apricots
  • 1 cup sugar
  • 2 tablespoons butter softened
  • 1/4 cup water
  • 1/2 cup orange juice
  • 2 cups flour sifted
  • 2 teaspoons baking powder
  • 1/4 teaspoon soda
  • 1 teaspoon salt
  • 1/2 cup nuts chopped

Instructions

  1. Soak apricots in warm water to cover.
  2. Drain and cut up apricots.
  3. Mix sugar and butter together thoroughly.
  4. Stir in water and orange juice.
  5. Sift together the flour, baking powder, soda, and salt.
  6. Blend in the nuts and apricots.
  7. Line the bottom of a greased loaf pan with paper.
  8. Grease the paper and pour in the batter.
  9. Let stand for 20 minutes.
  10. Bake in a 350°F oven for 55 to 60 minutes or until a wooden pick inserted into the center comes out clean.
  11. Remove from the pan.
  12. Take off the paper immediately.
  13. Let cool on a rack.
