Ingredients

  • 1 cup natural applesauce
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 2 cups flour
  • 1/4 cup apple juice
  • 1 cup grated carrot
  • 1/4 cup confectioners sugar
  • 1/2 cup dried apricots
  • 1/4 cup vegetable oil
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray an 8 x 4 x 2-inch loaf pan with cooking spray.
  3. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
  4. In a medium-sized bowl, beat the egg and then mix in the sugar, applesauce, grated carrots, and vegetable oil.
  5. Add the wet ingredients all at once to the dry ingredients and stir just until moistened; the batter will be thick.
  6. Fold in the dried apricots.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.
  9. Wrap the loaf and let it sit overnight before slicing.
