Ingredients

  • 1 lb vanilla wafers, crushed
  • 2 c powdered sugar
  • 1 c real butter
  • 3 egg yolks
  • 3 egg whites
  • 1 tsp vanilla
  • 1 lb cooked apricots
  • 1 pt whipped cream

Instructions

  1. Save out 2/3 of the crushed vanilla wafers.
  2. Put the remaining crushed wafers in a large pan to form the crust.
  3. Cream together the powdered sugar and butter until smooth.
  4. Add the egg yolks to the creamed mixture and mix well.
  5. Beat the egg whites until stiff peaks form, then fold into the mixture; add vanilla extract.
  6. Run the cooked apricots through a sieve to puree.
  7. Spread the egg mixture over the wafer crumbs in the pan.
  8. Top the egg filling with the pureed apricots.
  9. Spread the whipped cream on top of the apricots.
  10. Refrigerate the dessert overnight before serving.
