Apricot Dessert(Non-Bake)

Instructions
- Save out 2/3 of the crushed vanilla wafers.
- Put the remaining crushed wafers in a large pan to form the crust.
- Cream together the powdered sugar and butter until smooth.
- Add the egg yolks to the creamed mixture and mix well.
- Beat the egg whites until stiff peaks form, then fold into the mixture; add vanilla extract.
- Run the cooked apricots through a sieve to puree.
- Spread the egg mixture over the wafer crumbs in the pan.
- Top the egg filling with the pureed apricots.
- Spread the whipped cream on top of the apricots.
- Refrigerate the dessert overnight before serving.
