Ingredients

  • 1/4 cup warm water
  • 2 tablespoons sugar
  • 1 tablespoon sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon lemon rind
  • 1/4 cup margarine
  • 1/2 cup milk
  • 1 egg yolk

Instructions

  1. Dissolve yeast in 1/4 cup warm water and 2 tablespoons sugar. Set aside.
  2. Combine flour, salt, and lemon rind in a mixing bowl.
  3. Add margarine and milk to the dry ingredients and mix until well blended.
  4. Add the egg yolk and the yeast mixture, then knead the dough until smooth and elastic.
  5. Cover the dough and let it rise until doubled in size, about 1 hour.
  6. Preheat oven to 375°F (190°C).
  7. Divide the dough into small balls and flatten each into a circle.
  8. Place a spoonful of apricot filling in the center of each circle.
  9. Fold the edges over the filling and pinch to seal.
  10. Place the filled pastries on a baking sheet and bake for 15 minutes or until golden brown.
