Ingredients

  • 1 cup dried apricots
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1/4 cup water
  • 1/2 cup orange juice
  • 1/2 cup walnuts

Instructions

  1. Soak dried apricots in warm water for 15 minutes.
  2. Drain water and cut apricots into pieces.
  3. Set aside.
  4. Cream together shortening and sugar.
  5. Add well-beaten egg; blend well.
  6. Sift flour, baking powder, baking soda, and salt.
  7. Add sifted dry ingredients alternately with water and orange juice to the creamed mixture, mixing after each addition.
  8. Fold in chopped apricots and walnuts.
  9. Pour batter into a greased 9 x 5 x 3-inch loaf pan.
  10. Push batter into corners of the pan, leaving the center slightly hollow.
  11. Let stand for 20 minutes before baking.
  12. Bake at 375°F for 60 to 65 minutes.
