Ingredients

  • 5 medium zucchini
  • 1 medium onion
  • 1 1/2 cups Bisquick
  • 3 eggs
  • 1/2 cup salad oil
  • 1 1/2 cups grated cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano

Instructions

  1. Wash the zucchini and chop into small cubes.
  2. Add the diced onion and grated cheese to the zucchini.
  3. Add Bisquick, salt, pepper, and oregano.
  4. Add eggs and oil; mix well until combined.
  5. Pour the mixture into a greased casserole dish.
  6. Bake in a preheated oven at 350°F (180°C) for about 45 minutes or until golden brown.
  7. Can be frozen uncooked; defrost for 3 hours before baking.
  8. For a main dish, add two cans of lobster or crabmeat to the mixture before baking.
  9. Serve warm.
