Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1 c. chopped nuts
  • 3 1/2 tsp. baking powder
  • 1 c. finely chopped dried apricots
  • 3 Tbsp. salad oil
  • 1/2 c. milk
  • 4 tsp. grated orange peel

Instructions

  1. Measure all ingredients into a large mixer bowl.
  2. Beat at medium speed for 30 seconds, scraping sides and bottom of the bowl constantly.
  3. Pour the batter into a greased and floured 9 x 5 x 3 inch loaf pan.
  4. Bake at 350°F for 55 to 65 minutes.
  5. Remove from the pan and cool thoroughly before slicing.
