Ingredients

  • 1/2 cup orange juice
  • 1 cup dried apricots, chopped
  • 1/4 cup brown sugar
  • 1 cup oat bran
  • 1/4 cup wheat germ
  • 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 2 tablespoons sunflower oil or vegetable oil
  • 1/2 cup skim milk

Instructions

  1. In a small saucepan, heat orange juice until boiling.
  2. Mix in chopped apricots and brown sugar.
  3. Remove from heat and cool slightly.
  4. Combine oat bran, wheat germ, whole wheat flour, and baking powder; set aside.
  5. In a mixing bowl, beat together sunflower or vegetable oil, skim milk, and egg.
  6. Add dry ingredients and apricot/orange juice mixture; mix until just moistened.
  7. Fill greased muffin tins or cupcake papers two-thirds full.
  8. Bake at 400°F for 15 minutes or until golden brown.
