Ingredients

  • 3 cups sifted flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1/2 cup milk
  • 1 package yeast
  • 1 slightly beaten egg
  • 1/2 teaspoon vanilla

Instructions

  1. Sift flour, sugar, and salt together. Cut in 1 cup shortening. Scald milk, cool to lukewarm, then add yeast and let soften. Add the slightly beaten egg and vanilla.
  2. Add the flour mixture to the yeast mixture. Mix well. Divide dough into 4 parts.
  3. On a board dusted with confectioners' sugar, roll out each part into a 10-inch square.
  4. Using a pie crust crimper or knife, cut each square into 16 (2 1/2-inch) squares.
  5. Place a heaping teaspoonful of apricot filling in the center of each square.
  6. Bring opposite corners of each square together to form a pouch or triangle.
  7. Place the filled pastries 2 inches apart on a greased baking sheet.
  8. Let stand for 10 minutes to rise slightly.
  9. Bake at 350°F (175°C) for 10 to 12 minutes until golden. Remove immediately from the sheet and roll in sugar.
