- Sift flour, sugar, and salt together. Cut in 1 cup shortening. Scald milk, cool to lukewarm, then add yeast and let soften. Add the slightly beaten egg and vanilla.
- Add the flour mixture to the yeast mixture. Mix well. Divide dough into 4 parts.
- On a board dusted with confectioners' sugar, roll out each part into a 10-inch square.
- Using a pie crust crimper or knife, cut each square into 16 (2 1/2-inch) squares.
- Place a heaping teaspoonful of apricot filling in the center of each square.
- Bring opposite corners of each square together to form a pouch or triangle.
- Place the filled pastries 2 inches apart on a greased baking sheet.
- Let stand for 10 minutes to rise slightly.
- Bake at 350°F (175°C) for 10 to 12 minutes until golden. Remove immediately from the sheet and roll in sugar.
