Ingredients

  • 4 cups sliced apricots (fresh or frozen)
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • 1/4 cup flour
  • 1/8 teaspoon nutmeg (optional)
  • pastry for double crust pie

Instructions

  1. In a large bowl, sprinkle sliced apricots with lemon juice.
  2. Combine sugar, flour, and nutmeg.
  3. Add the sugar mixture to apricots and toss to coat.
  4. Fill a pastry-lined 9-inch pie plate with the apricot mixture and dot with butter.
  5. Cover with the top crust, seal, and flute the edges.
  6. Bake at 375°F for 20 minutes.
  7. Check if crust is browning; if so, cover edges with foil and bake for another 25 minutes until golden brown.
  8. Cool on a rack before serving.
