Ingredients

  • 1 whole pheasant
  • 1/4 cup butter
  • salt
  • pepper
  • 1 clove garlic, sliced
  • 1 cup wild rice, raw
  • 3/4 cup apricot juice

Instructions

  1. Place the whole pheasant on aluminum foil in a roaster.
  2. Rub the interior of the pheasant with butter, then season with salt, pepper, and sliced garlic.
  3. Cover the bird with uncooked wild rice.
  4. Pour apricot juice and chopped apricots over all.
  5. Wrap the entire roaster tightly in the foil.
  6. Bake in a 325°F oven until the pheasant can be easily pierced with a fork.
