Ingredients

  • 10 oz. package spinach, thawed and drained
  • 2 cups seasoned crushed croutons
  • 1/4 cup melted oleo
  • 1 cup small curd cottage cheese
  • 4 oz. Swiss cheese, cubed
  • 3 eggs
  • 1/4 cup chopped onion
  • 2 Tbsp. sour cream
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/4 cup Parmesan cheese

Instructions

  1. Combine the seasoned crushed croutons and melted oleo; press into a quiche pan to form the crust.
  2. Mix together 1/4 cup Parmesan cheese, spinach, cottage cheese, cubed cheese, eggs, chopped onion, sour cream, minced garlic, and salt until well blended.
  3. Spoon the filling mixture over the crust in the pan.
  4. Bake in a preheated oven at 350°F for 35 minutes until set and golden.
  5. Sprinkle with additional Parmesan cheese before serving.
  6. Let stand for 5 minutes before slicing and serving.
