Ingredients

  • 12 tablespoons butter (169 grams)
  • 1 12 cups granulated sugar (300 grams)
  • 3 large eggs (150 grams)
  • 34 cup buttermilk (184 grams)
  • 2 cups all-purpose flour (240 grams)
  • 2 tablespoons cocoa
  • 34 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 tablespoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon baking soda
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, chopped (125 grams)

Instructions

  1. Pre-heat oven to 350F.
  2. Cream butter and sugar.
  3. Add eggs.
  4. Mix dry ingredients together (setting walnuts aside).
  5. Add buttermilk and dry mixture alternately to creamed butter/sugar/egg mixture.
  6. Mix well.
  7. Add vanilla and lemon extract.
  8. Fold in walnuts.
  9. Pour mixture into a tubed pan (greased and floured).
  10. Bake in 350 F oven until center tests done with a toothpick (50-60 minutes).
  11. Remove from pan and let cool.
