Ingredients

  • 5 large eggs, beaten
  • 2 jars marinated artichoke hearts, chopped
  • 8 oz. sharp Cheddar cheese, grated
  • 6 to 8 green onions, chopped
  • 1 large clove garlic, minced
  • 10 saltine crackers, crushed
  • 1/2 tsp. salt
  • 1/8 tsp. red pepper

Instructions

  1. Saute chopped green onions and minced garlic in the liquid from the marinated artichoke hearts.
  2. Mix beaten eggs, chopped artichoke hearts, grated Cheddar cheese, sautéed onions and garlic, crushed saltine crackers, salt, and red pepper.
  3. Pour the mixture into a well-greased 9 x 12 inch pan.
  4. Bake at 350°F for 35 to 40 minutes until set and golden.
  5. Best if made a day in advance and allowed to absorb flavors before serving.
  6. Serve cold or hot.
