Artichoke Bake

- Saute chopped green onions and minced garlic in the liquid from the marinated artichoke hearts.
- Mix beaten eggs, chopped artichoke hearts, grated Cheddar cheese, sautéed onions and garlic, crushed saltine crackers, salt, and red pepper.
- Pour the mixture into a well-greased 9 x 12 inch pan.
- Bake at 350°F for 35 to 40 minutes until set and golden.
- Best if made a day in advance and allowed to absorb flavors before serving.
- Serve cold or hot.
