Ingredients

  • 1 lb. ground beef
  • 1 tsp. crushed red pepper
  • 1 medium red onion, sliced
  • 1 medium green pepper, chopped
  • 1/4 cup lemon juice
  • 1/2 tsp. dried mint leaves
  • 1 tsp. instant beef bouillon
  • 2 cups hot cooked rice
  • 2/3 cup seeded chopped cucumber

Instructions

  1. In a large skillet, brown ground beef and crushed red pepper; pour off excess fat.
  2. Add sliced red onion, chopped green pepper, lemon juice, dried mint leaves, and beef bouillon; cook and stir until well combined.
  3. Meanwhile, combine hot cooked rice and chopped cucumber; keep warm.
  4. Place about 1/4 cup of rice mixture and 1/3 cup of meat mixture on each lettuce leaf.
  5. Roll up each leaf and serve immediately.
