Ingredients

  • 2 large chicken thighs
  • 1 medium onion
  • 2 cloves garlic
  • 1/2 green pepper
  • 1 tsp. oregano
  • 1/8 tsp. paprika
  • 1/4 lb. ham
  • 2 cans chicken broth
  • 1/2 cup pearl rice
  • 1/2 cup fresh cilantro
  • 1/2 envelope achiote-cilantro
  • 4 oz. tomato sauce

Instructions

  1. Combine all ingredients except rice in a pot and bring to a boil.
  2. Reduce heat and simmer for about 45 minutes.
  3. Add pearl rice to the pot and continue boiling until the soup thickens, adding water if needed.
  4. Taste and adjust with salt as necessary.
  5. Serve hot.
