Asparagus-Bacon Roll-Ups
Asparagus-Bacon Roll-Ups are a delightful appetizer featuring tender asparagus spears wrapped in creamy, flavorful cream cheese and crispy bacon, all nestled in soft white bread. - Cook the asparagus spears; drain and cool.
- Use a rolling pin to flatten out the bread.
- Cut off the crusts after you have rolled over the bread.
- Spread the cream cheese over the bread slices, sprinkle bacon bits over this, add the asparagus spear and roll as for a jellyroll.
- Cut each roll in half, place on a cookie sheet, brush each roll with butter and sprinkle the Parmesan cheese on top.
- Bake in a hot oven (400°) until the Parmesan has a golden glow (about 5 to 8 minutes), but watch closely so the rolls don't burn.
- You could also broil 6 inches from the broiler until lightly toasted.
