Ingredients

  • 2 Tbsp butter or margarine
  • 2 Tbsp flour
  • 1 cup milk
  • 1/2 tsp salt
  • 1 lb fresh asparagus, cooked
  • 4 hard-cooked eggs
  • 1 cup grated Cheddar cheese
  • 1 cup buttered soft white bread crumbs
  • 1/2 diced pimento

Instructions

  1. Melt butter or margarine in a small saucepan.
  2. Stir in salt and flour.
  3. Cook until boiling.
  4. Add milk, stirring constantly, until mixture thickens and boils for 1 minute.
  5. Add diced pimento to the sauce.
  6. Combine cooked asparagus and chopped hard-cooked eggs in a baking dish.
  7. Pour the sauce over the mixture.
  8. Sprinkle grated Cheddar cheese on top.
  9. Add buttered soft white bread crumbs over the cheese.
  10. Bake until bubbly and golden brown.
