Ingredients

  • 3 lb. spinach
  • 6 Tbsp. shredded Parmesan cheese
  • 6 Tbsp. minced onion
  • 6 Tbsp. heavy cream
  • 5 Tbsp. melted margarine
  • 1/2 c. cracker crumbs

Instructions

  1. Clean and cook spinach until tender.
  2. Drain well and chop coarsely.
  3. Mix chopped spinach with Parmesan cheese, minced onion, heavy cream, and 4 tablespoons of melted margarine.
  4. Place the mixture in a shallow, 1-quart baking dish.
  5. Sprinkle with cracker crumbs and drizzle with remaining margarine.
  6. Bake in a preheated oven at 375°F for 10 to 15 minutes until heated through and golden on top.
