Ingredients

  • 1 lb. fresh asparagus
  • 1/4 tsp. salt
  • 1 1/2 cups uncooked egg noodles
  • pinch of cayenne pepper
  • 3 tablespoons butter or margarine
  • 3 tablespoons flour
  • 1 1/3 cups milk
  • 5 to 6 hard-boiled eggs
  • 1 cup grated or cubed Cheddar cheese

Instructions

  1. Wash and trim the fresh asparagus.
  2. Cook the asparagus in unsalted, boiling water until almost tender.
  3. Drain the asparagus, reserving the cooking liquid.
  4. Add 3 cups of water to the reserved liquid and bring to a boil.
  5. Stir in the uncooked egg noodles and cook until limp but still slightly firm.
  6. Drain the noodles well.
  7. Meanwhile, melt the butter or margarine in a saucepan.
  8. Stir in the flour and cook for 1-2 minutes to make a roux.
  9. Gradually add the milk, stirring constantly until the sauce thickens.
  10. Chop the hard-boiled eggs and add to the sauce.
  11. Stir in the grated or cubed Cheddar cheese until melted.
  12. Combine the cooked noodles, asparagus, and cheese sauce in a baking dish.
  13. Season with salt and a pinch of cayenne pepper.
  14. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes until bubbly and golden.
