Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1/2 cup milk with 1 tablespoon lemon juice stirred in
  • 1 cup mashed bananas

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 5 x 3-inch loaf pan.
  2. Cream together the sugar and shortening until well combined.
  3. Add eggs one at a time, beating well after each addition.
  4. Sift in the flour and baking soda, alternating with stirring in the buttermilk and mashed bananas.
  5. Stir in chopped walnuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake at 350°F (175°C) for 65 minutes or until a toothpick inserted into the center comes out clean.
