Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup butter or shortening
  • 3 teaspoons baking powder

  • 2 tablespoons sugar
  • 1 1/2 cups milk
  • 2 eggs

Instructions

  1. Preheat oven to 400°F.
  2. Combine dry ingredients — cornmeal, flour, baking powder, salt, and sugar — in a mixing bowl.
  3. Stir well to mix evenly.
  4. Add melted butter or shortening, milk, and eggs to the dry ingredients.
  5. Mix well, but don't overmix to keep the batter tender.
  6. Pour the batter into a greased 9 x 9-inch baking dish.
