Instructions

  1. Brown the hamburger and half of the diced onion in a skillet, then drain well.
  2. Return the cooked meat and onion to the skillet on low heat, add enchilada seasoning, and mix well.
  3. Set aside the seasoned meat to cool for 15 minutes.
  4. Warm the tortilla shells slightly to make them pliable.
  5. Spread a layer of enchilada sauce on the bottom of a baking dish.
  6. Place a tortilla shell on a plate, spoon some of the seasoned meat onto it, sprinkle with shredded cheese, then roll it up.
  7. Arrange the rolled tortillas seam-side down in the baking dish.
  8. Pour remaining enchilada sauce over the top, then sprinkle with additional cheese.
