Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 cup sugar
  • 4 to 5 tablespoons melted margarine
  • 24 oz. cream cheese
  • 4 medium eggs
  • 2 teaspoons vanilla
  • 1 teaspoon lemon juice
  • 1 cup sugar
  • 1 pint (16 oz.) sour cream
  • 1 cup heavy cream

Instructions

  1. Grease the bottom and sides of a cheesecake pan with margarine.
  2. Mix graham cracker crumbs, 1 cup sugar, and melted margarine together.
  3. Pat the mixture firmly into the pan and place in the freezer while preparing the rest of the cake.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add 4 eggs one at a time, mixing well after each addition.
  6. Stir in 2 teaspoons vanilla and 1 teaspoon lemon juice.
  7. Gradually add 1 cup sugar and mix until combined.
  8. Fold in the sour cream and heavy cream until smooth.
  9. Pour the filling into the prepared crust.
  10. Bake at 325°F (163°C) for approximately 50-60 minutes, or until set.
  11. Let cool completely, then refrigerate for at least 4 hours before serving.
