Ingredients

  • 12 eggs
  • 1 large bell pepper, chopped
  • 1 medium onion, chopped
  • 1 lb. bacon or sausage
  • 3/4 cup milk
  • 12 oz. cheese
  • sift of parsley
  • salt and pepper to taste
  • Italian seasoning (optional)
  • salsa

Instructions

  1. Cut bacon into small pieces or crumble sausage into small pieces and fry until browned.
  2. Add chopped bell pepper and onion to the meat and cook until the onion starts to clear.
  3. Beat eggs with milk in a bowl.
  4. Pour the egg mixture into the skillet with meat and vegetables.

  6. Serve with salsa if desired.
