Ingredients

  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 tsp. cinnamon
  • 3 c. grated carrots
  • 1/2 c. coconut
  • 1/2 c. chopped nuts

Instructions

  1. In a large bowl, mix salad oil and sugar.
  2. Add eggs one at a time, beating after each addition.
  3. Gradually add sifted dry ingredients and mix well.
  4. Add grated carrots, coconut, and chopped nuts; mix until combined.
  5. Pour batter into a greased 9 x 13-inch pan.
  6. Bake at 350°F for 40 to 50 minutes until done.
