Aunt Susie'S Apple Bread

- Preheat oven to 350°F (175°C). Grease two loaf pans or use angel or Bundt pans without greasing.
- In a large mixing bowl, combine salad oil, sugar, peeled and diced apples, eggs, vanilla, and cinnamon. Mix well.
- In a separate bowl, whisk together flour, salt, and baking soda.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in chopped pecans.
- Pour the batter evenly into the prepared loaf pans or pans of choice.
- Bake for 60 to 90 minutes until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool in the pans for a few minutes.
- Remove from pans and cool completely on a wire rack before serving.
