Ingredients

  • 1 cup salad oil
  • 1 cup chopped pecans
  • 2 cups sugar
  • 2 cups peeled and diced apples
  • 3 eggs
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 teaspoons vanilla
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease two loaf pans or use angel or Bundt pans without greasing.
  2. In a large mixing bowl, combine salad oil, sugar, peeled and diced apples, eggs, vanilla, and cinnamon. Mix well.
  3. In a separate bowl, whisk together flour, salt, and baking soda.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Fold in chopped pecans.
  6. Pour the batter evenly into the prepared loaf pans or pans of choice.
  7. Bake for 60 to 90 minutes until a toothpick inserted in the center comes out clean.
  8. Remove from oven and let cool in the pans for a few minutes.
  9. Remove from pans and cool completely on a wire rack before serving.
