Ingredients

  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. shortening
  • 3/4 c. orange juice
  • 1 egg
  • 1 Tbsp. grated orange peel
  • 1 c. sliced cranberries

Instructions

  1. Combine flour, sugar, baking powder, baking soda, and salt in a bowl.
  2. Cut in the shortening until the mixture resembles coarse crumbs.
  3. Add orange juice, beaten egg, and grated orange peel to the flour mixture.
  4. Mix until just moistened.
  5. Fold in sliced cranberries.
  6. Pour the batter into two greased 8 x 4 x 2-inch loaf pans or one large loaf pan.
  7. Bake at 350°F (175°C) for 35 minutes or until a toothpick inserted into the center comes out clean.
