Authentic Mexican Rice
Ingredients
- 1 c. long grain rice ⓘ
- 1 garlic clove ⓘ
- 1 tsp. salt (optional) ⓘ
- 2 Tbsp. vegetable oil ⓘ
- 1 small onion, chopped ⓘ
- 2 tomatoes, peeled and chopped ⓘ
- 1 1/4 c. water ⓘ
- 1 c. chicken broth ⓘ
- 1/3 c. frozen peas, thawed ⓘ
- 1/3 c. frozen corn, thawed ⓘ
- 1 small carrot, cooked and diced ⓘ
- 2 sprigs Chinese parsley, chopped (optional) ⓘ
- 1/3 c. diced salami or sausage (mild) ⓘ
Instructions
- Boil garlic and mash it into a paste; set aside.
- Brown rice in oil.
- Add onion and garlic paste.
- Add Chinese parsley.
- Add tomatoes and cook until softened into rice mixture.
- Add water. Stir in broth, carrot, peas, corn and diced meat.
- Simmer 3 to 5 minutes.
- Reduce heat and steam on low heat for 30 to 45 minutes. Makes 4 to 5 servings.
