Authentic Mexican Rice

Ingredients

  • 1 c. long grain rice
  • 1 garlic clove
  • 1 tsp. salt (optional)
  • 2 Tbsp. vegetable oil
  • 1 small onion, chopped
  • 2 tomatoes, peeled and chopped
  • 1 1/4 c. water
  • 1 c. chicken broth
  • 1/3 c. frozen peas, thawed
  • 1/3 c. frozen corn, thawed
  • 1 small carrot, cooked and diced
  • 2 sprigs Chinese parsley, chopped (optional)
  • 1/3 c. diced salami or sausage (mild)

Instructions

  1. Boil garlic and mash it into a paste; set aside.
  2. Brown rice in oil.
  3. Add onion and garlic paste.
  4. Add Chinese parsley.
  5. Add tomatoes and cook until softened into rice mixture.
  6. Add water. Stir in broth, carrot, peas, corn and diced meat.
  7. Simmer 3 to 5 minutes.
  8. Reduce heat and steam on low heat for 30 to 45 minutes. Makes 4 to 5 servings.
