Ingredients

  • 2 cups canned or mashed cooked pumpkin
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 3 slightly beaten eggs
  • 2 cups reliquefied nonfat dry milk made as per package directions
  • non-calorie sweetener to 8 tablespoons
  • 1/2 cup sugar

Instructions

  1. Combine pumpkin, salt, cinnamon, ginger, nutmeg, and cloves in a bowl.
  2. Add the beaten eggs, reconstituted nonfat dry milk, non-calorie sweetener, and sugar; mix well.
  3. Pour the mixture into nine 5-ounce custard cups.
  4. Set the cups in a shallow pan and fill the pan with hot water to 1 inch deep.
  5. Bake in a moderate oven at 350°F for about 40 minutes or until a knife inserted comes out clean.
  6. Serve warm or cold, topped with whipped dry milk sweetened with non-calorie sweetener if desired.
