Ingredients

  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp Cheddar cheese
  • 4 oz. can chopped green chilies
  • 3 eggs, beaten
  • 1/2 to 3/4 cup chopped onions
  • 1 cup half and half
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Spanish seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Bake the pie shell for 5 minutes.
  3. Sprinkle 1/2 cup of Monterey Jack cheese, 1/2 cup of sharp Cheddar cheese, chopped onions, and chopped green chilies into the shell.
  4. Beat the eggs, half and half, Spanish seasonings, garlic powder, and onion powder together.
  5. Pour the egg mixture into the pie shell over the layered ingredients.
  6. Sprinkle the remaining sharp Cheddar cheese on top of the pie.
  7. Place a cookie sheet under the pie to catch any drips.
  8. Bake at 325°F (163°C) for 40 minutes or until a knife inserted in the center comes out dry.
  9. Serve hot or cold, ideally with a salad.
