Ingredients

  • 1/2 cup yellow cornmeal
  • 1 1/2 cups milk
  • 2 eggs
  • 1/4 cup butter or margarine
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 1/4 teaspoon crushed red chiles
  • 1 cup shredded sharp Cheddar cheese
  • 5 slices cooked bacon

Instructions

  1. Heat the cornmeal and 1 1/4 cups of milk over medium heat until thick and dry, stirring frequently, about 3 minutes.
  2. Spoon the cornmeal mixture into a bowl.
  3. Add the remaining milk, butter, and beaten eggs.
  4. Beat until smooth.
  5. Stir in salt, baking powder, and crushed red chiles.
  6. Stir in shredded Cheddar cheese and cooked bacon pieces.
  7. Pour the batter into a cake pan.
  8. Bake at 325°F (163°C) for 35 minutes or until cooked through.
