Ingredients

  • 16 oz. assorted dry beans
  • 8 c. water
  • 1 1/4 lb. ham hocks
  • 28 oz. can whole tomatoes, undrained and cut up
  • 1 c. chopped onion
  • 1/2 c. chopped carrots
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 lemon slice (1/2-inch thick)

Instructions

  1. Soak the beans in water for 12 hours.
  2. Drain the beans; add 8 cups of water and ham hocks to a large pot.
  3. Bring to a boil, then reduce heat, cover, and simmer for 3 hours.
  4. Add the tomatoes, chopped onion, chopped carrots, chili powder, salt, pepper, and lemon slice to the pot.
  5. Bring the mixture to a boil again.
  6. Reduce heat; simmer for 30 minutes.
  7. Remove the bones from the soup and cut the meat from the bones.
  8. Return the meat to the soup and discard the lemon slice.
