Instructions

  1. Combine coconut and butter.
  2. Press mixture into an 8 or 9-inch pan to form a crust.
  3. Bake at 300°F for 30 to 35 minutes or until brown.
  4. Melt marshmallows and chocolate in milk over hot water.
  5. Remove from heat and add vanilla.
  6. Allow to cool.
  7. Pack strawberry ice cream into the cooled crust.
  8. Cover with chocolate sauce and freeze until firm.
  9. Beat egg whites and salt until foamy.
  10. Gradually add sugar and beat until stiff peaks form.
  11. Spread meringue over the ice cream filling, sealing to the crust.
  12. Sprinkle with additional coconut.
  13. Place the pie on a board and bake at 500°F for about 2 minutes or until the meringue is browned.
  14. Serve immediately or return to freezer until ready to serve.
