Ingredients

  • 1 cup sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 or 3 medium apples

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grease an 8 x 8-inch pan.
  3. Sift together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. In a mixing bowl, cream the butter with sugar and egg until light and fluffy.
  5. Grate the apples medium fine.
  6. Measure 2 cups of grated apples.
  7. Add the grated apples to the egg mixture.
  8. At low speed, beat in the sifted flour mixture just until combined.
  9. Pour the batter into the prepared pan.
  10. Bake for 20 to 30 minutes until golden and a toothpick inserted in the center comes out clean.
  11. Allow to cool before serving. Store in the pan.
  12. Cut into 8 squares and serve.
