Baked Apple Pudding With Rum

- Preheat oven to 400°F (200°C).
- Grease an 8 x 8-inch pan.
- Sift together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a mixing bowl, cream the butter with sugar and egg until light and fluffy.
- Grate the apples medium fine.
- Measure 2 cups of grated apples.
- Add the grated apples to the egg mixture.
- At low speed, beat in the sifted flour mixture just until combined.
- Pour the batter into the prepared pan.
- Bake for 20 to 30 minutes until golden and a toothpick inserted in the center comes out clean.
- Allow to cool before serving. Store in the pan.
- Cut into 8 squares and serve.
