Baked bean stuffed peppers offer a hearty, flavorful meal with savory beef, sweet beans, and crispy onion topping, perfect for family dinners or casual gatherings.

Ingredients

  • 4 large peppers
  • 1 lb ground beef
  • 1 (1 lb) can pork and beans in tomato sauce
  • 1 (4 oz) can French fried onion rings
  • 1/2 cup catsup
  • 1 teaspoon prepared mustard

Instructions

  1. Remove seeds and stems from the peppers.
  2. Parboil peppers in boiling water for 5 minutes, then drain and cool.
  3. Brown and cook the ground beef in a skillet.
  4. Drain excess grease from the cooked beef.
  5. Stir in the pork and beans, half of the French fried onion rings, catsup, and mustard into the beef.
  6. Spoon the mixture into the prepared peppers.
  7. Place the stuffed peppers in a greased shallow baking pan.
  8. Bake at 350°F for 20 minutes.
  9. Add the remaining French fried onion rings on top of the peppers.
  10. Bake for an additional 10 minutes or until onions are hot and crisp.
