Ingredients

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 48 oz. tomato juice
  • 1 (15 oz.) can peas
  • 1 (15 oz.) can whole kernel corn
  • 1 (15 oz.) can sliced carrots
  • 6 to 8 large potatoes, peeled and cubed

Instructions

  1. Brown the ground beef in a large pot, then drain excess fat.
  2. Add chopped onion to the beef and sauté until translucent.
  3. Pour in the tomato juice and bring to a simmer.
  4. Add the canned peas, corn, sliced carrots, and peeled, cubed potatoes.
  5. Season with salt and pepper to taste.
  6. Simmer the soup for 1 to 2 hours until vegetables are tender and flavors meld.
