Ingredients

  • 2 cups graham crackers
  • 1/2 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup melted butter
  • 4 eggs
  • 1 cup sugar
  • 1/2 tablespoon lemon juice
  • 2 tablespoons lemon rind, grated
  • 1/2 teaspoon salt
  • 1 cup light cream
  • 3 cups dry cottage cheese

Instructions

  1. Heat oven to 350°F (175°C).
  2. Combine crushed graham crackers, 1/2 cup sugar, and 1 1/2 teaspoons cinnamon in a bowl. Reserve 3/4 cup of the mixture with a spoon.
  3. Press the remaining crumb mixture into the bottom and sides of a 9-inch spring-form pan.
  4. Beat eggs until light, then slowly beat in 1 cup sugar.
  5. Add the remaining ingredients: lemon juice, lemon rind, salt, light cream, and cottage cheese. Beat until blended.
  6. Sieve the mixture to remove lumps.
  7. Stir in lemon rind.
  8. Pour the filling into the prepared pan.
  9. Sprinkle the reserved crumbs on top.
  10. Bake at 350°F for 1 hour.
  11. Turn off the oven and open the door. Let the cake cool in the oven for 1 hour.
  12. Remove from oven and chill thoroughly.
  13. Remove the sides of the spring-form pan before serving.
