Ingredients

  • 2 broiler-fryers, cut up (3 lb.)
  • 2 tsp. dried rosemary leaves
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 10 green onions, chopped
  • 2 c. unsweetened pineapple juice
  • 1 tsp. ginger
  • paprika

Instructions

  1. Preheat oven to 350°F.
  2. Wash and skin the chicken pieces.
  3. Drain the chicken well on paper towels.
  4. Combine dried rosemary, salt, and pepper in a small bowl.
  5. Rub the seasoning mixture into the chicken pieces.
  6. Arrange the chicken, meaty side up, in a baking dish. Sprinkle with chopped green onions.
  7. Combine pineapple juice and ginger in a bowl; pour over the chicken.
  8. Sprinkle paprika over the top.
  9. Bake uncovered for 55 to 60 minutes or until the chicken is tender.
