Ingredients

  • 2 (16 oz.) cans corn
  • 1 bunch green onions
  • 2 Tbsp. butter
  • 2 Tbsp. brown sugar
  • 1 c. sour cream
  • 1 Tbsp. Dijon mustard
  • 1/2 c. grated Cheddar
  • 1 Tbsp. grated Parmesan

Instructions

  1. Drain the cans of corn and place in a shallow 9-inch dish.
  2. Slice green onions and sauté them in butter until tender.
  3. Sprinkle the sautéed green onions with brown sugar.
  4. In a small bowl, combine sour cream, Dijon mustard, black pepper, and grated Cheddar cheese.
  5. Spoon the sour cream mixture over the corn and onions.
  6. Sprinkle grated Parmesan cheese on top.
  7. Bake in a preheated oven at 375°F for 30 to 35 minutes until heated through and cheese is bubbly.
