Ingredients

  • 2 lb. fresh yellow squash, sliced
  • 1 large onion, sliced
  • 1 c. grated Cheddar cheese
  • 2 eggs, beaten
  • 2 Tbsp. sugar
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1/2 c. butter, melted
  • 1 c. cracker crumbs
  • 1/3 c. slivered almonds

Instructions

  1. In a saucepan, just cover the sliced squash and onion with water and cook until tender.
  2. Drain the cooked squash and onion.
  3. Mix the drained squash and onion with grated Cheddar cheese, beaten eggs, sugar, salt, and pepper.
  4. Pour the mixture into a greased 1 1/2-quart baking dish.
  5. Blend melted butter, cracker crumbs, and slivered almonds, then sprinkle on top of the squash mixture.
  6. Bake at 400°F for 20 minutes or until golden and bubbly.
  7. Allow to cool slightly before serving.
  8. May be prepared ahead of time.
