Ingredients

  • 1 recipe cornbread
  • 1/4 cup chopped onions
  • 1/2 cup diced celery
  • 1/2 cup margarine or butter
  • 2 eggs
  • 1/2 teaspoon black pepper
  • 1 teaspoon poultry seasoning
  • 1 1/4 cups chicken or turkey stock or canned consomme

Instructions

  1. Bake Homestead Yellow Cornbread, then crumble when cool into a 2-quart bowl.
  2. Lightly brown chopped onions and diced celery in margarine or butter.
  3. Add beaten eggs, black pepper, and poultry seasoning to the crumbled cornbread.
  4. Stir in the sautéed onions and celery, then add chicken or turkey stock.
  5. Pour the mixture into a well-greased 6 or 8-inch square pan.
  6. Bake at 350°F for 30 minutes or until browned to your liking.
