Baked Devil Eggs

Ingredients

  • 8 hard-boiled eggs
  • 1/3 c. mayonnaise
  • 1/2 tsp. paprika
  • 1/4 tsp. curry powder
  • 1/4 tsp. dry mustard
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 can cream of celery soup
  • 3/4 c. milk
  • 1/2 c. (2 oz.) sharp Cheddar cheese, shredded
  • 1/4 tsp. curry powder

Instructions

  1. Cut eggs lengthwise.
  2. Remove the yolks and mash.
  3. Mix with mayonnaise, paprika, curry powder and dry mustard.
  4. Refill egg whites.
  5. Place in baking dish, 10 1/2 x 6 x 1 1/2-inches.
  6. Melt butter.
  7. Blend in flour and add celery soup and milk.
  8. Cook and stir until bubbly.
  9. Add cheese.
  10. Stir in curry powder.
  11. Pour over eggs.
