Ingredients

  • 10 oz. frozen raspberries in syrup, thawed
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup flour
  • 1/4 cup plus 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F.
  2. Lightly butter a 9-inch pie plate or a 1-quart shallow baking dish.
  3. Spread the raspberries and their juice evenly on the bottom of the pie plate.
  4. Make the batter.
  5. In a blender, mix eggs, milk, heavy cream, flour, 1/4 cup of sugar, and vanilla; blend well.
  6. Pour batter over the fruit.
  7. Sprinkle with an extra tablespoon of sugar.
  8. Bake for 20 to 25 minutes or until pudding is set and golden around the edges.
