Ingredients

  • 1/2 cup sliced onion
  • 1 clove garlic, minced
  • 2 teaspoons vegetable oil
  • 3 tablespoons chopped parsley
  • 1 teaspoon basil
  • 1/4 teaspoon pepper
  • 1 (8 oz) can tomato sauce
  • 2 tablespoons water
  • 1 cup packed spinach, chopped and frozen
  • 1 cup ricotta cheese
  • 2 tablespoons grated cheese
  • salt to taste

Instructions

  1. In a nonstick skillet, sauté onion and garlic in oil for 5 minutes.
  2. Stir in parsley, basil, and pepper; sauté for 2 minutes.
  3. In a small saucepan, combine half of the onion mixture, tomato sauce, and water. Set aside.
  4. Add chopped and frozen spinach to the remaining onion mixture in the skillet. Stir over medium heat until spinach is thawed and warmed through.
  5. Remove from heat.
  6. Mix in ricotta cheese, 1 tablespoon of grated cheese, and salt to taste.
  7. Fill each shell with the ricotta mixture.
  8. Simmer the tomato sauce mixture for 5 minutes.
  9. Spoon half of the tomato sauce into a shallow 1-quart baking dish.
  10. Arrange the stuffed shells in the dish.
  11. Spoon the remaining tomato sauce over the shells and sprinkle with grated cheese.
  12. Cover loosely with foil and bake at 375°F for about 20 minutes.
