Baked Spanish Rice

Ingredients

  • 4 bacon slices
  • 1 cup chopped onions
  • 1/2 cup diced green pepper
  • 1 (16 oz.) can tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 1/3 cups long grain rice
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F and grease a 1 1/2-quart casserole dish.
  2. In a large skillet over medium heat, fry bacon until crisp.
  3. Drain bacon on paper towels and crumble; set aside.
  4. Pour off all but 2 tablespoons of bacon drippings from the skillet.
  5. In hot drippings, cook chopped onions and green pepper until tender.
  6. Drain tomatoes, reserving liquid, and add enough water to make 1 3/4 cups of liquid.
  7. Cut up the tomatoes.
  8. Add the tomato liquid, tomatoes, tomato sauce, sugar, and salt to the onion mixture; heat to boiling.
  9. Remove from heat and stir in the rice.
  10. Pour the mixture into the prepared casserole.
  11. Cover the casserole and bake for 35 minutes or until the rice is tender.
  12. Fluff the rice with a fork.
  13. Sprinkle shredded Cheddar cheese on top.
  14. Bake for an additional 5 minutes or until cheese is melted.
  15. Garnish with cooked bacon before serving.
