Ingredients

  • 1 (9-inch) pie crust
  • 5 medium tomatoes, sliced
  • 1 bell pepper, sliced
  • 1 Vidalia onion, chopped
  • 1 Tbsp. chopped basil
  • 2 c. grated sharp Cheddar cheese
  • 1 c. mayonnaise
  • 1 tsp. Dijon mustard
  • 1/2 c. Parmesan cheese

Instructions

  1. Layer sliced bell pepper, sliced tomatoes, and chopped onion in the pie pan.
  2. Mix chopped basil, grated sharp Cheddar cheese, and Dijon mustard together.
  3. Add salt and pepper to taste into the cheese mixture.
  4. Spread the cheese mixture evenly over the layered vegetables in the pie.
  5. Sprinkle Parmesan cheese on top of the pie.
  6. Bake for 30 minutes at 350°F (175°C).
