Ingredients

  • 4 slices bacon
  • 1 clove garlic
  • 1 onion
  • 1/4 lb mushrooms
  • 1 Tbsp flour
  • 1/2 tsp seasoned salt
  • 10 tomatoes
  • 1/4 cup plus 2 Tbsp grated Parmesan cheese
  • 1 Tbsp butter

Instructions

  1. Fry bacon until crisp; remove bacon and set aside.
  2. Reserve pan drippings in skillet.
  3. Set bacon aside to drain.
  4. Sauté garlic, onion, and mushrooms in the skillet until tender.
  5. Stir in bacon, flour, and seasoned salt.
  6. Cut tomatoes into 1/2-inch slices.
  7. Place half of the tomato slices in a lightly greased 10 x 6 x 2-inch baking dish.
  8. Spoon half of the bacon mixture over the tomatoes; sprinkle with 3 tablespoons of Parmesan cheese.
  9. Repeat layers and dot with butter.
  10. Bake at 350°F for 25 minutes.
